yup, on this gorgeous vancouver day, i am inside figuring out how to post pictures :) i've added a couple under ski trip 2006 and fondue party!check out my view today. this is what beautiful bc is all about. of course, i am afraid of heights so i tried not to look down from my balcony. even though there's a railing to prevent a possible fall, you never know when a big gust of wind could just pick me up and blow me over the edge!
anyhoo, i had a busy weekend of cooking. in addition to the poached chicken on friday night, i also (sort-of) cooked on saturday. chris had brought home a lot of maui ribs (so yum!), so he invited his grandma over. i made soup (pork-bone base) w/wintermelon, rice and stir-fried brocolli and asparagus with garlic. yum! so back to these maui ribs.....i do not have the complete recipe, but i have been privy to a few of the ingredients that make them so delicious. but the most secret ingredient is marination......they get marinated for DAYS and DAYS before anyone can buy them. you can buy them fresh from chris' shop, and they are phenomenal on the bbq. now unfortunately we don't have a bbq at our disposal, so we broiled them in the oven for 10 minutes, then voila! absolute (for a non-bbq) perfection :) sorry, my blog is not very vegetarian friendly, but that's the life of a butcher's wife! hahaha, i can rhyme :-)
tonight's dinner was a simple one.....spaghetti w/ground pork in a tomato sauce w/onions, mushrooms and celery. i love meals that can be cooked in one pot, and don't require a lot of dishes! while i was getting dinner ready, i watched extreme makeover: home edition. this is one of those shows that can have me bawling every time. they always pick a family that is in dire need of house help, and tonight was no exception. the family had suffered through hurricane wilma and then the single dad was diagnosed with cancer. it was a special 2-hour show, and 1/2 way through, dad took a turn for the worst, and no one knew if he would make it to see the finished house. everyone was crying, yet praying and hoping that dad would make it home and see his dream come true. the story did have a happy ending, and dad did eventually make it home.....not in time to say "MOVE THAT BUS!" live and in person, but better late than never :-)
