so anyways, after i finally made it home, i picked up my grocery list and went to superstore. of course, why wouldn't i experience yet another little transportation incident? i was waiting for the down elevator a bit longer than normal, but no big deal, it finally came. there was another lady in the elevator going to ground level. well, we sort of made it to ground, when the door opened about an inch, then it completely stopped. hmmmm, door open/door close didn't work, hitting G didn't work, nor did P1 (which is where i was trying to go). luckily the on-site property manager knew about the problem, and was at ground waiting for the elevator, so she told us to try and go back up to 2. well, while she was talking, the elevator magically moved again, and we were down to P1. i think i'll always carry a cell phone w/me in the elevator in case i ever get stuck again. at least i can start calling ppl and be somewhat productive w/my time :-)
so i finally made it to superstore and brought my groceries home so i could make a new recipe i discovered in Real Simple magazine. i bought it last night because i figured how could i go wrong w/that kind of title for a magazine?! and low and behold, it was amazing, because i whipped up a Balsamic Poached Chicken that was really quite easy and yummy. here's the recipe.... (my meal didn't quite look like the picture)

1 pound new potatoes, halved or quartered
3 tablespoons olive oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound asparagus, trimmed
1 14.5-ounce can low-sodium chicken broth
1 cup balsamic vinegar
1.5 pounds boneless, skinless chicken breasts
heat oven to 400F. place the potatoes in a roasting pan. drizzle with the oil. season with 3/4 teaspoon of the salt and the pepper, and toss. roast for 30 minutes, shaking the pan once. add the asparagus to the pan with the potatoes, season with the remaining salt, and toss. roast until the asparagus is tender, 12 to 15 minutes. meanwhile, in a saucepan, bring the broth and vinegar to a boil. add the chicken and, if necessary, enough water (up to 1/2 cup) to cover it. simmer for 1 minute. cover, remove from heat, and set aside until cooked through, about 15 minutes. transfer the chicken to a cutting board. return the liquid to medium-high heat and simmer until reduced to about 1/3 cup, about 10 minutes. thickly slice the chicken. divide the ingredients among individual plates. drizzle with the balsamic mixture. serves 4. total time 1 hour.
and for our 2nd course, chris and i will be having soup later tonight. i'm boiling the life out of the bones right now.....so yummy!

i love poached chicken. it keeps the chicken so moist and tender.
